I am using the pro app with privacy setting as follow:
public with email
collecting real user email
For some reason, when signing-in, I am not recognised as an existing user profile, although my email is in the list.
Instead, I am recognised as immune-bikes-129@anonymous.appuser.io
and therefore can not access user specific profile information
Can someone please help? I can not seem to make it work

If you had previously signed in using that email address with email anonymisation enabled, then there could still be some internal mapping to the anonymous email.
You could try using the Delete User Data function to remove that, and then try again.
