Does anyone know why users cannot type information if we not using a form for submission?
There needs to be at least one row with data in the target sheet.

I have added data but it still greys out
Can you show a screenshot of:
- The first input component configuration, and
- The target column for that component in the data editor
I have experienced this a few times 
Maybe (ignore the post title about switch)
“This happens when you have no rows of data in your sheet, but can also happen if you have a filter set on the tab or if you have row owners enabled and the email you are using doesn’t have a row in the sheet. Be sure to check if you have row owners enabled or if you have a filter set on your tab”

Looking at your app screen shot
You can see that the name field is blank even though the name appears in the sheet.
Therefore I assume you are not writing to the correct sheet or not filtering correctly. Email is signed in user

What about the user profile tab filter? Your showing us the filter on the component, right?

Ahh are you using a form? As this will not work, it creates a new entry.
You just need to display the existing fields to edit and update.
No I am using a button that links to screen where users can type in the profile information can I maybe PM you a link to have a look?
