When putting in a location, clicking brings me to Apple Maps where I want to use Google Maps or Waze. Is it possible to set this different?

Yes, switch to Android. 
Actually, I don’t have any experience with IOS, but I came across this article. One possible option would maybe be to use the share button to open the address in another app???

If you use Google Maps URLs, you can open the Google Maps app.
We will eventually allow your users to pick their preferred default app in your app settings.
I was advised to use lat-long so that’s what I do

But I can try to change that
Sorry, I meant if you use Google Maps links and use Open link actions, you can open Google Maps — you cannot open Google Maps on iOS via the map.
