Is there a way to change the date formatting so instead of receiving the date in format of mm/dd/yyyy they will appear as dd/mm/yyyy and will also sent this way to the sheet?
The Glide team is aware of this. It is something they are working on. See this post. Dates in calendar misinterpreted in Glide builder
