Thanks, Eric. This can be a workable solution for now. I suppose that sheets & tables from users are still refreshed when they do modifications, right? What happens if I change some row or columns logic or reference? Thanks for your help.

Ah ok, I didn’t read very well your point about “a modification in the design”, sorry 
This is right, maybe the APP shows an updating once but next modifications aren’t shown unless user reloads APP.
But it happens even working with web pages or native APP, major/minor changes are not showed on screen in real-time as far I know.

You should make small incremental changes. If you are unsure of things or think you did damage…then revert those changes. You don’t want to edit any data because that will be pushed to the live app.
I’d also recommend duplicating the app and trying publishing control in there first
