Signed in User as a Default Value - How to?

I presently have a Choice field where, when entering a new timesheet entry, a technician selects her/his name from a list. It’s simple to use, but there is a chance a user can select the wrong name.

Is it possible to make the value of the field the user’s name or email address? I’d like to do that logically, and hide the field from the user while creating a new entry. Is that possible?

Assuming that this is done within a form, you can use User Profile column values.
