Hey, is there anyone who knows if there is a way to make content added by users 100% private for them - so that even I don’t see it in the cells of the google sheet?

You can create user specific columns which will not be stored in the sheet.
Thank you Jeff it took me much further. However I notice I cannot find the text now that I make go into a private column, with the search bar in my “checklist”. Is there any way around this?
