When I am making an onboarding experience to collect a profile picture and first name. It doesn’t change that logged in user but the first row in the user’s sheet.

you have to filter the tab to return only the current user row of the user sheet.
If you make the user email a row owner, this will automatically happen and the user can only update his own image and name.
otherwise in the onboarding tab, filter to show only signed in user id.
