Is there a way to count the number of users who signed out?
there is no such info.
if you use GS - you can get info about user who made a sign in.
but it’s doesn’t mean that they use app right now, and doesn’t mean that they still logged in.

As a workaround, using a custom action, you could add an increment action one of your popular buttons to increment a new number column by 1 every time someone clicks the button. This does not tell you who has signed out, but it will show you who is clicking the button.
You could also create a date column and update it with the current date every time the button is clicked too.
Be careful, however, as this might use more of your monthly updates than you anticipate.
