I doubted as I am having exactly the same issue. Was searching over the community and came across this post.

Hi, yes I do.

There’s no video I can show as it take quite awhile.

However, on the setting → privacy → user email addresses → collect real user email will automatically reverted to hide user email addresses after few hours or so.

l had that problem yesterday.
Collect real emails was Off. Si l needed to switch it manually.
I need to check this, now everyday !!
I suggest that this option should be deleted. I do understand that it is linked to free accounts. Why not to limit free accounts to 10 users ( with real email addresses)?
Just an idea…
