Darren, which option should I select? I am guessing “Copy the sheet” is the option I am looking for so that the new app is untied to the old Classic, correct?
Have a read of the below before deciding:
There are 3 dots next to my Classic App, I think I should then select “Copy the sheet” so that the new modern version of the App that I am going to rebuild is not sharing/tied to the old app. Does that sound correct?
Yes, if you want it to be completely independent of the old App, you should select the “Copy the sheet” option.

Ok, I will proceed that way. You were mentioning Basic and Computed columns. Am I going to have to recreate the formulas for all of those computed columns that are relying on relations lookups?
No. When you duplicate the App, you will get an exact copy of the database with all computed columns intact.
