I can’t delete these two tables (Workflow Run Log and Workflow Step Log). I tried Unlinking but nothing happens. I even deleted schedule workflow then tried deleting / unlink the 2 tables, still nothing happens

To be honest, I’m not sure whether or not there is an option to delete - or even hide - them.
However, Workflow Run Log and Workflow Step Log are very relevant tables for monitoring the activity on your Glide apps and also troubleshooting errors.
As mentioned in the official documentation page (cf. Troubleshooting Workflows) these two tables are designed to capture all the information about your workflows such as the User who triggered the workflow, when it started and ended, the status (completed or not), how it has been triggered and so on.
This is extremely useful when you want to answer questions such as:
- are my workflows running correctly?
- how many times this workflow has been run?
- what data was passed through the workflow when it was triggered today at 7:02 AM?
- how long does it take to run this workflow in a typical situation?
- …
According to a Jack video (cf. https://www.youtube.com/watch?v=C8KIeLzHSEA&t=243s starting at 4:03), these information are available for the last 90 days and you can dig them to identify what needs to be improved… or just get some stats.
To sum up: I’m not sure there’s a way to remove these two marvelous tables 
It should be possible to unlink them from an App, but you can’t delete them.
