For my app I want to Add Table, but Google Sheet option is greyed out. Why?
You can add only one Google spreadsheet per app and you already have a Google spreadsheet added. To add a table from the Google Sheets source, add a tab in your linked Google spreadsheet. Each new tab in your spreadsheet will be a new table in the Data Editor.
