I am them putting this through a template column and it is changing the email addresses formatting which makes sense as it makes it a hyperlinked text.
however, I can’t render that has part of a list field.
Is there a way to stop this happening or getting the hyperlink to work in the list?
Do you mean the email address becomes clickable and you do not want that?
Perhaps try a different text component, such as the rich text or hint text component.

Does this note “If you don’t see it, please check your junk folder. If it’s still missing, feel free to reach out to us at implementation@salesape.ai.” appear in a collection component? Or on a details screen in a text component?
I see. The warning is part of the checkbox collection inside the custom collection. I don’t think an email address in a collection would be clickable because that would interfere with a collection item click.
Is this warning the last warning inside the checklist collection? If so, you could shorten the text of the warning (“If you don’t see it, please check your junk folder.”) and then below the checkbox collection but still in the custom collection, you could add a rich text component which would allow you to have a clickable email address.
