Has the facility to have an inline list been removed from Apps ?
It is still available in classic apps but I am unable to replicate it in my new app.
I could hover over the first line of the text or click the arrow to see the full meaning
I believe that it may have been replaced with “collections” but it doesn’t appear to have the same functionality
Inline Lists are now just Collections. Functionality is different in new apps. You could maybe try a Custom Collection and add various components inside of it to try to get something similar.

I have tried but it seems like it’s not possible.
I find it a bit strange that items that functioned really well have been cut/ removed/ altered in the new version.

The new component mentioned by @Jeff_Hager is a custom component that allows you to combine various other components within an item list. You can have a richer variant of the inline list by combining it with text components, rich text, buttons, and more. After that, I am sure you will love it.
If you have at least a Starter plan (not sure), you can try the newly launched custom component. You can freely use AI or HTML to create your own styled components. Combining it with custom collections will be very powerful.
Nowadays, whether we like it or not, we must get to know and adapt to AI. I am very sure you won’t choose a classic application anymore.
Just based off the screenshot in your example, a list collection with an on click action of show detail screen set to “slide in” will give you the same effect
