What if you create a new column in Glide, a boolean column, and mark it as user specific?

Great, yes I think it works now when I created the column in Glide instead of in Sheets

Hmm actually every time a new user logs in the checklist is now blank. How do I make sure only the checkmarks are user specific not the text? E.g want everyone to get the same list but then to check whether done or not individually. Now I did it in glide sheet (user specific in format text)

Only make the column that holds the checkbox value user specific. The text column should be a regular column in the sheet.
