I’m curious to know if its possible to create a appointment booking app and have all the submitted appointments stored in a google sheet or have a sms sent to myself. Thank you 
It’s easily possible, yes. You can search for “appointment” in this forum, you’ll find lot of similar requests / showcasesthat will help you.
And for SMS notification, you can use zapier to integrate Gsheet and twilio, for example.
