My app is for collecting field data outside, however, if there is no cell signal or wifi, will my app store the data on the device until getting connected and performing a data sync?
If so, do I need to program that into the app or does it happen automatically with Glide (yes!).

Depends on which plan you are on and what is happening within your app when you suddenly become offline. Generally it will only display what has been cached while the app is running. You can only add new rows and view existing data, but you can’t edit any existing data.
To answer your question, this functionality is automatic.
Remember, these are web apps, so having an internet connection is crucial. I wouldn’t rely on offline mode to always work as expected.
