It’s kind of hard to describe but… When I try and edit the name of an app in Settings/General if I try to insert any character in the existing name that is not the last character the character gets inserted but the cursor jumps to the end of the text. Also if I try and completely replace the name with something else, if I don’t type within a fraction of a second the cursor moves, and a default name appears. Very strange.
