Generating a Complex schedule tab

Thinking of something along the lines of using a details page and loading in an inline list of either individual “by day” schedules, or by person with click to view to show a full summary including start/stop times, hour totals, and weekly totals. Problem being, the weeks need to start on saturday, and end on friday, which, sheets arent very “simple” when it comes to generating formulas for. Ideally, insert a choice or date picker to act as a schedule filter on which data to display.
Just not too sure on how to go about setting up my data input and creating an array formula system to sort the new inputs into correct “weeks” ie, 7/18-7/24, 7/25-7/31…
