Is there a way to update the Chat username? I’ve tried deleting the login profile, cleared browser cache, the username is still stuck to my email. It seems like the name is associated always with the email.

Have you tried changing the name in the user profile? Otherwise, I’m not sure if it can be changed.

I believe that’s the only way we can change it at the moment. If you want something more flexible then use a form to populate a Chat sheet, but that comes at the expense of row counts.
