Can the differences seen on the Pages version be avoided, such as displaying shortcuts for calling, narrower fields, is it possible to have everything available on the apps mode also be available on the Pages mode?"

There will be a lot of changes for Pages going forward, since David (the CEO) expects it to be a better version of Apps. They will phase out Apps eventually, and will bring more components over in the next months.
