Does the date and time stamp automatically correspond to where the device is logging in from?.. or are there settings to set the time zone for the date and time stamp?

The current time is the current time of the users device.
If you write that to a Date/time column with “Respect time zones” enabled, then each user will see that value adjusted for their own time zone.
